It&#8217;s all I can do to keep my mind on work during the day instead of dreaming about the delicious dinner we&#8217;ve got planned. Not to mention all the baking we&#8217;ll be doing in the next month. Oh man, oh man, oh man.</p>
<p>Tonight I made gingersnap cookies for the first time. Half of them are to eat and half of them are for our Thanksgiving dinner pumpkin pie crust. I didn&#8217;t think I liked gingersnaps but these were so good! I got the recipe here: <a href="http://allrecipes.com/Recipe/grandmas-gingersnap-cookies/detail.aspx" target="_blank">Grandma&#8217;s Gingersnap Cookies</a>. I read somewhere that the holidays don&#8217;t officially begin in a home until there are gingersnaps baking&#8230; they may be right!</p>

			<content:encoded><![CDATA[<p>Matt started making smoothies for himself a month or so ago. While I don&#8217;t think they are bad, they aren&#8217;t exactly what I&#8217;d look forward to having. Some acquaintances of mine recently did a 10 day juice/smoothie fast and shared a ton of recipes online (<a href="http://www.facebook.com/groups/245164805504348/">link to Facebook group</a> if you are interested). Yesterday I had a smoothie and I seriously couldn&#8217;t wait today to have another. They are so refreshing. And easy. And quick. And cheap. And less sugary than Jamba Juice or the like.</p>
<p>1/2 nectarine<br />
1 banana<br />
3 strawberries<br />
small handful of spinach<br />
small handful of ice<br />
2 T. water</p>
<p>Love love love.</p>

We hit three more National Parks before arriving at Matt&#8217;s uncle&#8217;s house in Colorado. Bryce Canyon, North Rim of the Grand Canyon and Canyonlands were all very cool. For the next week we are spending time with Matt&#8217;s mom and brother, this is our view above of the the Grand Mesa. It is so peaceful up here, I barely know what to do with myself. I brought a bunch of projects to work on but tossed those ideas because I don&#8217;t need to be busy all the time. At least that&#8217;s what I keep telling myself. Haha.</p>

<p>Matt and I are taking a giant road trip this month. When we set out, I had each day planned in detail but we quickly dropped our plans and started taking it a day at a time. We are still hitting each destination but in a different order. We were planning to camp the last two nights but decided to get a room when we realized the 100 degree temperatures were wiping us out and that we wanted to have air conditioning and a shower to go back to after a long day of hiking. </p>
<p>So far we&#8217;ve spent one day walking the strip in Vegas, one day at Valley of Fire State Park in Nevada, one day working (we left town before my vacation started) and today at Zion National Park in Utah. We&#8217;re definitely looking forward to hiking at a higher elevation tomorrow so we can get some relief from the hot weather. This part of the country is so beautiful. I&#8217;m glad we took the chance to take this trip.</p>
