Gingersnap Cookies

Thanksgiving is only a few days away! It’s all I can do to keep my mind on work during the day instead of dreaming about the delicious dinner we’ve got planned. Not to mention all the baking we’ll be doing in the next month. Oh man, oh man, oh man.

Tonight I made gingersnap cookies for the first time. Half of them are to eat and half of them are for our Thanksgiving dinner pumpkin pie crust. I didn’t think I liked gingersnaps but these were so good! I got the recipe here: Grandma’s Gingersnap Cookies. I read somewhere that the holidays don’t officially begin in a home until there are gingersnaps baking… they may be right!

A Smoothie a Day

Matt started making smoothies for himself a month or so ago. While I don’t think they are bad, they aren’t exactly what I’d look forward to having. Some acquaintances of mine recently did a 10 day juice/smoothie fast and shared a ton of recipes online (link to Facebook group if you are interested). Yesterday I had a smoothie and I seriously couldn’t wait today to have another. They are so refreshing. And easy. And quick. And cheap. And less sugary than Jamba Juice or the like.

1/2 nectarine
1 banana
3 strawberries
small handful of spinach
small handful of ice
2 T. water

Love love love.

Bryce Canyon National Park

Matt and I liked each National Park we visited this summer for different reasons… Bryce Canyon National Park was awesome because of the cool temperatures and beautiful rim views. There were a gazillion spires at each lookout point. We didn’t have time to hike down into the canyon but we will next time. I want to see the spires from the ground!

4th of July Bubbles

Matt and I hiked to a lookout point at the Grand Canyon and came upon a group of retirees blowing bubbles into the canyon. It was hilarious! They were laughing and having a great old time. They insisted on us taking part — it was so much fun! Haha.

Road Trippin’ – Week 2

We hit three more National Parks before arriving at Matt’s uncle’s house in Colorado. Bryce Canyon, North Rim of the Grand Canyon and Canyonlands were all very cool. We didn’t make it to Arches because we ran out of time and light… again. Hopefully we’ll get there before Delicate Arch falls in! For the next week we are spending time with Matt’s mom and brother, this is our view above of the the Grand Mesa. It is so peaceful up here, I barely know what to do with myself. I brought a bunch of projects to work on but tossed those ideas because I don’t need to be busy all the time. At least that’s what I keep telling myself. Haha.

Road Trippin’ – Week 1

Matt and I are taking a giant road trip this month. When we set out, I had each day planned in detail but we quickly dropped our plans and started taking it a day at a time. We are still hitting each destination but in a different order. We were planning to camp the last two nights but decided to get a room when we realized the 100 degree temperatures were wiping us out and that we wanted to have air conditioning and a shower to go back to after a long day of hiking.

So far we’ve spent one day walking the strip in Vegas, one day at Valley of Fire State Park in Nevada, one day working (we left town before my vacation started) and today at Zion National Park in Utah. We’re definitely looking forward to hiking at a higher elevation tomorrow so we can get some relief from the hot weather. This part of the country is so beautiful. I’m glad we took the chance to take this trip.

I’m Pinterested

My latest obsession is Pinterest. I can’t stop pinning things I love, places I dream of seeing, inspiring quotes, etc. My bookmarks have gotten out of control over the years and I’m pretty sure I couldn’t find anything I’ve saved even if I tried. Pinterest is cool because you can scroll through all the photos you’ve saved, in the categories you’ve set up and never lose them! Yeah! Definitely join–just make sure to allot enough time to spend looking at pretty things online. Also, look for me: pinterest.com/stephlloyd

Regrets of the Dying

Tonight I came across a blog post, Regrets of the Dying, by a nurse who had cared for people in their last few weeks of life. In it she lists the top five regrets her patients shared with her. So simple yet so inspiring. I, unfortunately, need these kinds of reminders along the way. It’s so easy to get caught up. Let me know what you think!
